Thai Special Chicken Lollipops – With Nam Jim Dipping Sauce

 30 chicken wing lollipop
Nam Jim Marinade/Sauce
 2 red chillis
 1 green chilli
 1 clove garlic
 1 cm ginger, grated
 50 g brown sugar
 1.50 tbsp fish sauce
 1 lime, juiced
 ¼ cup coriander leaves

In a food processor, combine the nam jim ingredients for 10 to 20 seconds.

Place the chicken wings in a bowl and pour half of the nam jim dressing over the chicken and marinade the chicken while the barbecue is preheating. Reserving the remaining nam jim for a serving sauce.

Set up your barbecue for indirect cooking. Please refer to your handbook for further instructions. Preheat your barbecue for high indirect cooking.

Once the barbecue has preheated, make adjustments to the burner control(s) for high indirect roasting. Place the chicken lollipops on the barbecue and roast for 20 minutes.

Serve the chicken lollipops with the nam jim dipping sauce.
